Broccoli is considered to be one of the most beneficial foods we can eat and for a good reason. The antioxidants in this vegetable may prevent colon and lung cancer, and its calcium is more easily absorbed than the calcium from milk, so as the result broccoli is great at building stronger bones.
Usually broccoli served raw or even worse overcooked, which may not taste good to anyone, especially kids. If you want to make broccoli better tasting try following recipes, your kids might even like it.
Guilt-free dips: Microwave broccoli florets and let it cool. Serve it with low-fat ranch dressing or a protein-rich hummus for more exotic taste.
Pasta primavera: Mix microwaved florets with cooked penne pasta sauteed chicken tenders, marinara sauce, and a dash of red-pepper flakes.
Super salad: Microwave florets and cool. Combine with grape tomatoes, lemon juice, and olive oil. The healthy fat helps your body absorb more vitamins.
Note: If you want to take a break from eating broccoli, you can try replace it with asparagus instead. This broccoli cousin is milder and more pleasant to eat. Buy several bunches, coat with olive oil and roast. Leftovers are great hot or cold and you can use them in pastas, sandwiches and salads.
