4 chicken breasts
2 cups of mushrooms
1 medium onion
1 medium red pepper
4 cups (low fat/ low sgar) tomato sauce
2 tablespoons chopped garlic
2 tablespoons of olive oil
1 tablespoon Italian seasoning
Healthy and Delicious Chicken Cacciatore
Spray baking dish with olive oil.
Place chicken breast in baking dish.
Top with salt, pepper and Italian seasoning.
Place in an oven and bake at 400F for about 20 minutes.
In a different pan add olive oil.
Add onion, mushrooms, garlic, and red peppers.
Mix and sate the mixture.
Add salt and pepper to taste.
Remove chicken from the oven after 20 minutes and cut into 1 inch cubes.
After chicken has been cut, add it to sauteed vegetables and mix while continuing to cook.
Add tomato sauce to the entire mix.
Cook additional 5 minutes.
Serve with rice or your favorite side dish.
